Over January and February, Michelle Wilson, our Area Officer for Tayside, visited Dundee International Women’s Centre to make hidden vegetable sauce pitta pizzas with mums and children. She also brought Bear along to sing songs and tell a story.
Michelle said “I have been visiting the Dundee international women centre for the last few years and always enjoy spending time with the women and children there. Sharing information about children’s healthcare rights, we always have a lot of fun. The children loved making the Pitta Pizzas, getting messy and tasting everything before it went in the oven. Bear enjoyed his own pizza too.”
We’ve included the recipe for the hidden vegetable sauce, which can be used to make pizza, pasta and soup. Easy, healthy, tasty!
Hidden Vegetable Sauce
Ingredients
- Chop 2 carrots
- Chop 1 onion
- Chop 2 sticks of celery
- Chop one red pepper
- One handful of red lentils
- Salt ½ teaspoon
- Pepper1teaspoon
- Garlic 1 clove
- Oregano 1 teaspoon
- Chili (to taste)
- ½ veg stock cube
- 1carton of passata
- 1 carton of water (use empty passata carton)
- Pinch of sugar
Recipe
- Place all ingredients in a pot and simmer for approx 20 minutes until lentils are cooked.
- Blend until smooth.
- Taste and add more seasoning if you need to.
Naan/Pitta Pizza
- Place Naan bread or Pitta bread on baking tray spread hidden vegetable sauce over the top and sprinkle with cheese.
- Cook in hot oven for approx 10 mins until cheese is bubbling and beginning to turn golden.
- Cool for 2 mins cut and serve.
Pasta
- Boil pasta as per packet instructions.
- Heat the hidden vegetable sauce.
- Drain pasta and pour sauce over pasta and mix.
- You could add strips of cooked chicken or other meat or fish.
Soup
- Heat the hidden vegetable sauce.
- Boil the kettle and dilute one vegetable stock cube with the boiling water as per packet instruction.
- Add to the hidden vegetable sauce and stir to combine.
- Serve with crusty bread.
